Bread Pudding

Ingredients

  • 300 g of day-old bread
  • 600 ml of milk
  • 150 g of sugar for the mixture
  • 150 g of sugar for the caramel
  • 4 eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of lemon zest
  • 80 g of raisins
  • 1 pinch of salt

Step-by-step

Choose your robot:
  1. Prepare the caramel: place 150 g of sugar in the mixing bowl and cook 12 min/Varoma/speed 1 until golden. Pour into a mold and spread.
  2. Place the milk in the mixing bowl and heat 4 min/50 degC/speed 1.
  3. Add the chopped bread and let it soak 5 minutes inside the mixing bowl.
  4. Add the sugar, the eggs, the vanilla, the zest, the raisins and the salt.
  5. Grind 30 sec/speed 5 until you get a homogeneous mixture.
  6. Pour the mixture into the caramelized mold.
  7. Bake in a water bath 50 min at 180 degC until the center is firm.
  8. Let it cool, unmold and serve cold.

Tips

  • Stale bread absorbs the milk better and gives the ideal texture.
  • Watch the caramel: from the right point to burnt is just seconds.
  • Serve it with a dollop of cream or dulce de leche.
