Bread Pudding
Moist pudding of bread soaked in milk and caramel, a grandmother's dessert.

Ingredients
- 300 g of day-old bread
- 600 ml of milk
- 150 g of sugar for the mixture
- 150 g of sugar for the caramel
- 4 eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of lemon zest
- 80 g of raisins
- 1 pinch of salt
Step-by-step
Choose your robot:
- Prepare the caramel: place 150 g of sugar in the mixing bowl and cook 12 min/Varoma/speed 1 until golden. Pour into a mold and spread.
- Place the milk in the mixing bowl and heat 4 min/50 degC/speed 1.
- Add the chopped bread and let it soak 5 minutes inside the mixing bowl.
- Add the sugar, the eggs, the vanilla, the zest, the raisins and the salt.
- Grind 30 sec/speed 5 until you get a homogeneous mixture.
- Pour the mixture into the caramelized mold.
- Bake in a water bath 50 min at 180 degC until the center is firm.
- Let it cool, unmold and serve cold.
Tips
- Stale bread absorbs the milk better and gives the ideal texture.
- Watch the caramel: from the right point to burnt is just seconds.
- Serve it with a dollop of cream or dulce de leche.
