Bean Cazuela with Pork Crackling
Creamy beans served with crispy pork crackling.

Ingredients
- 500 g red beans, soaked
- 200 g pork cracklings (chicharrón)
- 1 ripe plantain, chopped
- 1 carrot, grated
- 1 onion
- 2 tomatoes
- 3 garlic cloves
- 1.5 liters water
- Salt and cumin to taste
Step-by-step

- Chop the onion, tomato and garlic: 4 sec/speed 5 and sauté: 5 min/Varoma/speed 1.
- Add the drained beans, plantain, carrot and water: 60 min/100°C/reverse/spoon speed.
- Adjust the salt and cumin: 10 min/100°C/reverse/spoon speed.
- Fry the cracklings separately until crispy.
- Serve the beans with the cracklings on top and white rice.
Tips
- The ripe plantain adds a sweetness that balances the dish.
- For a creamier version, blend a ladleful and stir it back in.
