Ingredients

  • 600 g onion
  • 120 g brown sugar
  • 50 g balsamic vinegar
  • 30 g olive oil
  • 1 pinch of salt
  • 100 g red wine (optional)

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 4 sec/speed 4.
  2. Add the oil and saute 8 min/Varoma/speed 1.
  3. Add the sugar, vinegar, salt and wine.
  4. Place the basket on the lid to prevent splashes.
  5. Set 30 min/Varoma/speed 1 without the measuring cup until it confits and reduces.
  6. Check that it is dense and shiny.
  7. Pack hot into sterilized jars and seal under vacuum.

Tips

  • Pairs with foie, burgers and aged cheeses.
  • Store in the fridge for up to 3 weeks in a sealed jar.
  • The vinegar and sugar act as natural preservatives.
