Caramelized onion preserve
Sweet onion jam ideal for meats and cheeses.

Ingredients
- 600 g onion
- 120 g brown sugar
- 50 g balsamic vinegar
- 30 g olive oil
- 1 pinch of salt
- 100 g red wine (optional)
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 4 sec/speed 4.
- Add the oil and saute 8 min/Varoma/speed 1.
- Add the sugar, vinegar, salt and wine.
- Place the basket on the lid to prevent splashes.
- Set 30 min/Varoma/speed 1 without the measuring cup until it confits and reduces.
- Check that it is dense and shiny.
- Pack hot into sterilized jars and seal under vacuum.
Tips
- Pairs with foie, burgers and aged cheeses.
- Store in the fridge for up to 3 weeks in a sealed jar.
- The vinegar and sugar act as natural preservatives.
