Chicken Coxinha (Coxinha de Frango)
Teardrop-shaped Brazilian croquettes filled with shredded chicken.
Ingredients
- 400 g cooked chicken breast
- 1 onion
- 2 garlic cloves
- 2 tablespoons tomato sauce
- 500 ml chicken broth
- 300 g flour
- 30 g butter
- 100 g ricotta or thick cream
- 2 eggs
- 150 g breadcrumbs
- Oil for frying
- Salt, pepper and cilantro to taste
Step-by-step

- Chop the onion and garlic 5 sec/speed 5. Scrape down with the spatula.
- Sauté with a splash of oil 5 min/120°C/speed 1.
- Add the cooked chicken, tomato sauce, salt, pepper and cilantro. Shred 4 sec/speed 4 and set the filling aside.
- Without washing the mixing bowl, put the broth, butter and a pinch of salt. Heat 5 min/100°C/speed 1.
- Add the flour all at once and knead 2 min/closed lid/dough mode until a smooth dough forms.
- Remove the dough, let cool slightly, mix with the ricotta and set aside.
- Shape discs of dough, fill with the chicken and close into the classic teardrop coxinha shape.
- Dip each coxinha in beaten egg and then in breadcrumbs.
- Fry in hot oil until golden and drain on paper towels.
Tips
- Serve hot with Brazilian hot sauce.
- You can bake them at 200°C for about 25 min for a lighter version.
