Avocado (palta) cream soup
Smooth and fresh avocado cream soup with lime and cilantro.

Ingredients
- 2 ripe avocados (paltas)
- 500 g chicken or vegetable broth
- 100 g cream
- 1 spring onion
- The juice of 1 lime
- 1 bunch cilantro
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the spring onion in the mixing bowl and chop 4 sec/speed 5.
- Saute 4 min/Varoma/spoon speed.
- Add the broth and set 8 min/90C/speed 1.
- Add the avocado pulp, the lime juice, the cream, the cilantro, the salt and the pepper.
- Blend 1 min/speed 8 until you get a fine, homogeneous cream.
- Set 2 min/80C/speed 2 to warm without boiling.
- Serve immediately with a drizzle of cream and cilantro leaves.
Tips
- Do not boil it so the avocado does not turn bitter.
- Lime keeps the avocado from oxidizing and adds freshness.
- It can also be served cold on hot days.
