Ingredients
- 500 g of corn kernels
- 1/2 white onion
- 30 g of butter
- 1 sprig of epazote
- 1 teaspoon of salt
- 100 g of mayonnaise
- 100 g of crumbled fresh cheese
- Chile powder and lime to serve
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 3 sec/speed 5.
- Add the butter and saute 4 min/120°C/spoon speed.
- Add the corn kernels, the epazote and the salt.
- Program 12 min/100°C/reverse/spoon speed, adding 100 g of water if needed.
- Remove the epazote and distribute the esquites into cups.
- Top with mayonnaise, fresh cheese, chile powder and a splash of lime.
Tips
- If you use fresh corn, the flavor will be sweeter.
- For a vegan version, substitute mayonnaise and cheese with plant-based options.
