Ingredients

  • 500 g of corn kernels
  • 1/2 white onion
  • 30 g of butter
  • 1 sprig of epazote
  • 1 teaspoon of salt
  • 100 g of mayonnaise
  • 100 g of crumbled fresh cheese
  • Chile powder and lime to serve

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 3 sec/speed 5.
  2. Add the butter and saute 4 min/120°C/spoon speed.
  3. Add the corn kernels, the epazote and the salt.
  4. Program 12 min/100°C/reverse/spoon speed, adding 100 g of water if needed.
  5. Remove the epazote and distribute the esquites into cups.
  6. Top with mayonnaise, fresh cheese, chile powder and a splash of lime.

Tips

  • If you use fresh corn, the flavor will be sweeter.
  • For a vegan version, substitute mayonnaise and cheese with plant-based options.
