Homemade Flan with Dulce de Leche

Ingredients

  • 6 eggs
  • 500 ml of milk
  • 200 ml of heavy cream
  • 180 g of sugar for the mixture
  • 150 g of sugar for the caramel
  • 1 teaspoon of vanilla extract
  • 300 g of dulce de leche to serve
  • 200 ml of cream to accompany

Step-by-step

Choose your robot:
  1. Prepare the caramel: place 150 g of sugar in the mixing bowl and cook 12 min/Varoma/speed 1 until golden. Pour into the mold and cover the base.
  2. Place the milk and the cream in the mixing bowl and heat 5 min/70 degC/speed 1.
  3. Add the eggs, the sugar and the vanilla. Mix 30 sec/speed 4.
  4. Strain the mixture and pour it into the caramelized mold.
  5. Cover the mold with aluminum foil.
  6. Cook in a water bath in the oven 45 min at 170 degC until the center sets.
  7. Let it cool and refrigerate at least 4 hours.
  8. Unmold and serve with dulce de leche and a swirl of whipped cream.

Tips

  • Straining the mixture guarantees a flan without lumps or foam.
  • The gentle water bath keeps the flan from having bubbles.
  • The classic mixed flan carries dulce de leche and cream, so do not skimp.
