Panamanian morro horchata

Creamy refreshment of rice, seeds and spices, sweet and aromatic for the tropical heat.

Ingredients

  • 200 g rice
  • 1 liter water
  • 2 cinnamon sticks
  • 100 g sugar
  • 1 teaspoon vanilla essence
  • 50 g toasted peanuts, optional
  • A pinch of salt
  • Ice to serve

Step-by-step

Choose your robot:
  1. Place the rice, the cinnamon in pieces and 300 ml of the water in the mixing bowl and soak 5 min without blending.
  2. Add the peanuts and blend 2 min/progressive speed 5-10 until you get a fine paste.
  3. Add the rest of the water, the sugar, the vanilla and the salt and mix 1 min/speed 6.
  4. Heat 5 min/70C/speed 3 to better combine the flavors.
  5. Strain the mixture with a bag or fine strainer to remove the solids.
  6. Refrigerate at least 2 hours and serve very cold with plenty of ice.
  7. Stir before serving because the rice tends to settle.

Tips

  • Soaking the rice makes for a finer and creamier blend.
  • Adjust the sugar according to how sweet you like it.
  • Add a little milk or cream for a richer version.
