Ingredients
- 800 g pork, in chunks
- 300 g cooked rice
- 200 g cooked yellow split peas
- 1 scallion, chopped
- 4 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon achiote (annatto) coloring
- 300 ml pork broth
- Salt and pepper to taste
Step-by-step

- Chop the onion and garlic: 4 sec/speed 5 and sauté: 5 min/Varoma/speed 1.
- Add the pork, cumin, achiote, salt and broth: 40 min/100°C/reverse/spoon speed.
- Mix the cooked rice and split peas with the pork stew in a large bowl.
- Bake the mixture in a dish: 45 min at 180°C until golden.
- Serve with white arepa and ají.
Tips
- This homemade version is baked instead of using a whole pig.
- Yellow split peas are traditional to Tolima.
