Manjar Blanco
Thick milk and ground rice sweet, traditional from Valle del Cauca.

Ingredients
- 1000 g milk
- 300 g sugar
- 60 g rice flour
- 1 cinnamon stick
- 1 teaspoon baking soda
- 1 pinch salt
Step-by-step

- Dissolve the rice flour in 200 g milk and set aside.
- Put the rest of the milk, sugar, cinnamon and baking soda in the mixing bowl.
- Set 10 min/100°C/speed 2.
- Add the reserved rice flour mixture and the salt.
- Set 55 min/Varoma/reverse/speed 2 without the measuring cup, with the steaming basket on top.
- The manjar blanco is ready when it turns caramel-colored and thickens.
- Pour into a container, let cool and refrigerate.
Tips
- Use the steaming basket over the lid to prevent splatters while cooking.
- Scrape the bottom if you notice it sticking near the end of cooking.
