Passion Fruit Sour (Non-Alcoholic)
Frozen passion fruit drink with egg-white foam, no alcohol.

Ingredients
- 200 ml passion fruit pulp
- 100 ml simple syrup
- 1 egg white
- 300 g ice
- Angostura bitters drops, optional
Step-by-step

- Put the passion fruit pulp, syrup and egg white in the mixing bowl. Mix 20 sec/speed 4.
- Add the ice and blend 30 sec/speed 8 into a frothy, slushy mixture.
- Serve in chilled glasses.
- Garnish with a few drops of Angostura bitters over the foam if desired.
Tips
- The egg white creates the characteristic sour foam, without any alcohol.
- Adjust the sweetness depending on how tart the passion fruit is.
