Quick puff pastry
Homemade puff pastry with crispy layers for sweet and savoury dishes.

Ingredients
- 300 g pastry flour
- 250 g cold butter in cubes
- 130 g very cold water
- 5 g salt
Step-by-step
Choose your robot:
- Put the flour, salt and cold butter in cubes in the mixing bowl.
- Mix 8 sec/speed 4, leaving visible pieces of butter.
- Add the cold water and mix 10 sec/speed 4 without overworking.
- Turn the dough out onto the worktop and shape a rectangle without kneading.
- Make a simple fold in three and refrigerate 20 min.
- Repeat the rolling and folding three more times with cold rests in between.
- Roll out the final puff pastry to the desired thickness.
- Cut and fill according to the preparation you are going to make.
- Bake in a preheated oven at 200°C for 20 min until it rises and browns.
- Let cool so the layers turn out crispy.
Tips
- Always work with the butter and the dough very cold.
- The visible pieces of butter form the layers of the puff pastry.
