- 800 g apricots, pitted
- 350 g sugar
- The juice of 1 lemon
Step-by-step
Choose your robot:
- Chop the apricots in the mixing bowl 4 sec/speed 4.
- Add the sugar and lemon juice, mix 5 sec/speed 3.
- Place the basket on the lid to prevent splashes.
- Set 25 min/100C/speed 2 without the measuring cup to evaporate.
- Blend 20 sec/speed 5 if you want it without pieces.
- Check the setting point with a drop on a cold plate.
- Pack hot into sterilized jars and seal under vacuum upside down.
Tips
- Apricot has a lot of natural pectin and sets well.
- Store in a cool, dark place for up to 1 year.
- Ideal for filling sponge cakes and croissants.
