Tomato jam
Sweet tomato jam ideal for cheeses and meats.

Ingredients
- 800 g ripe tomatoes, peeled
- 350 g sugar
- The juice of 1 lemon
- 1 pinch of salt
- 1 clove (optional)
Step-by-step
Choose your robot:
- Chop the tomatoes in the mixing bowl 4 sec/speed 4.
- Add the sugar, lemon juice, salt and clove, mix 5 sec/speed 3.
- Place the basket on the lid to prevent splashes.
- Set 40 min/Varoma/speed 1 without the measuring cup to reduce and concentrate.
- Remove the clove and blend 15 sec/speed 4 if you want it finer.
- Check the setting point with a drop on a cold plate.
- Pack hot into sterilized jars and seal under vacuum.
Tips
- Blanch the tomatoes to peel them easily before starting.
- Pairs wonderfully with aged cheese and foie.
- Store in the fridge once the jar is opened.
