Pantrucas (Chilean Noodle Soup)
Soup with hand-cut dough squares, ground beef and egg.
Ingredients
- 2 cups flour
- 1 egg for the dough
- 1/2 cup warm water
- 300 g ground beef
- 1 onion, diced
- 2 garlic cloves
- 1 carrot, diced
- 1 teaspoon ají de color (paprika)
- 1 teaspoon oregano
- 3 tablespoons oil
- 1.3 liters broth
- 2 eggs
- Salt, pepper and cilantro

- Put the flour, egg, warm water and a pinch of salt in the mixing bowl and knead 2 min/closed lid/dough mode.
- Roll the dough thin on a floured surface and cut into 3 cm squares. Set aside.
- Wash the mixing bowl. Add the garlic and onion, chop 4 sec/speed 5 and sauté with the oil 6 min/120°C/spoon speed.
- Add the beef, ají de color, oregano, carrot, salt and pepper and sauté 6 min/Varoma/reverse/spoon speed.
- Add the broth and set 10 min/100°C/reverse/spoon speed.
- Add the dough squares gradually and set 8 min/100°C/reverse/spoon speed.
- Beat the 2 eggs and pour them in a thin stream through the lid opening, stirring 1 min/90°C/spoon speed. Serve with cilantro.
Tips
- Drop the pantrucas in separately so they don't stick together.
- The beaten egg at the end gives the classic silky touch.
