Papelon con Limon
Traditional refreshment of panela and lime, sweet and refreshing for the heat.

Ingredients
- 250 g of papelon (panela) in pieces
- 500 g of hot water to dissolve
- 100 g of freshly squeezed lime juice
- 1 liter of cold water
- Ice to taste
Step-by-step
Choose your robot:
- Place the papelon pieces in the mixing bowl and pulverize 10 sec/speed 8.
- Add the hot water and dissolve 5 min/70 degrees/speed 2 until you get a syrup.
- Let the syrup cool inside the mixing bowl for a few minutes.
- Add the lime juice and the cold water and mix 20 sec/speed 3.
- Taste and adjust the balance between sweet and sour to taste.
- Serve in glasses with plenty of ice and a slice of lime.
Tips
- Higher quality papelon gives a deeper molasses flavor.
- Serve it well chilled, it is the ideal refreshment for tropical weather.
- Some add a pinch of grated ginger to enhance the flavor.
