Papelon con Limon

Ingredients

  • 250 g of papelon (panela) in pieces
  • 500 g of hot water to dissolve
  • 100 g of freshly squeezed lime juice
  • 1 liter of cold water
  • Ice to taste

Step-by-step

Choose your robot:
  1. Place the papelon pieces in the mixing bowl and pulverize 10 sec/speed 8.
  2. Add the hot water and dissolve 5 min/70 degrees/speed 2 until you get a syrup.
  3. Let the syrup cool inside the mixing bowl for a few minutes.
  4. Add the lime juice and the cold water and mix 20 sec/speed 3.
  5. Taste and adjust the balance between sweet and sour to taste.
  6. Serve in glasses with plenty of ice and a slice of lime.

Tips

  • Higher quality papelon gives a deeper molasses flavor.
  • Serve it well chilled, it is the ideal refreshment for tropical weather.
  • Some add a pinch of grated ginger to enhance the flavor.
