Ingredients

  • 400 g of 0000 flour
  • 200 ml of warm salted water
  • 50 g of butter for the dough
  • 100 g of softened butter for laminating
  • 300 g of quince paste
  • Oil for frying
  • 150 g of sugar for the syrup
  • 75 ml of water for the syrup
  • Colored sprinkles to decorate

Step-by-step

Choose your robot:
  1. Place the flour, the salted water and the 50 g of butter in the mixing bowl. Knead 3 min/closed mixing bowl/dough mode.
  2. Rest the dough 20 min wrapped in film.
  3. Roll out the dough thin, spread it with softened butter, fold in three and roll out again. Repeat the folding twice.
  4. Cut 8 cm squares. Place a cube of quince paste in the center of a square.
  5. Cover with another square turned 45 degrees and press the edges forming points.
  6. Fry in hot oil until they open and turn golden, turning once.
  7. Prepare the syrup: cook sugar and water 10 min/Varoma/speed 1 to thread stage.
  8. Brush the pastelitos with syrup and sprinkle with colored sprinkles.

Tips

  • The homemade lamination gives the characteristic crispy layers.
  • Seal the edges well so the quince paste does not escape.
  • They are also filled with sweet potato paste.
