Sweet Plantain Pastelón
Puerto Rican lasagna of ripe plantain with ground beef and cheese.

Ingredients
- 4 ripe plantains
- 500 g ground beef
- 1 onion
- 1 red bell pepper
- 4 garlic cloves
- 200 g crushed tomato
- 50 g olives
- 50 g raisins
- 200 g shredded mozzarella cheese
- 2 eggs
- 200 g oil for frying
- Salt and pepper to taste
Step-by-step

- Peel and cut the plantains into long strips. Fry in oil 5 min until golden. Drain on paper.
- Put the garlic, onion and bell pepper in the mixing bowl. Chop 4 sec/speed 5 and scrape down with the spatula.
- Add 30 g oil and sauté 8 min/120°C/speed 1.
- Add the ground beef and sauté 7 min/Varoma/reverse/spoon speed.
- Add the tomato, olives, raisins, salt and pepper. Cook 10 min/100°C/reverse/spoon speed.
- In a baking dish, alternate layers of plantain, meat and cheese. Beat the eggs and pour over the top.
- Bake 25 min at 180°C until set and golden. Let rest before cutting.
Tips
- The sweet contrast of the plantain with the meat is what makes pastelón so beloved.
- Let it rest 10 min to cut clean portions.
