Quick Sweet Potato Picarones
A simpler version of sweet potato picarones with a fast syrup.

Ingredients
- 400 g cooked sweet potato
- 400 g flour
- 8 g dry yeast
- 1 teaspoon anise seeds
- 1 teaspoon salt
- Warm water as needed
- Oil for frying
- 250 g chancaca (raw cane sugar)
- 350 ml water
- 1 cinnamon stick
Step-by-step

- Blend the cooked sweet potato 30 sec/speed 5 into a smooth purée.
- Add the flour, yeast, anise, salt and a bit of warm water. Set 4 min/closed lid/dough mode until a sticky dough forms.
- Let rise covered 45 min until it grows.
- For the syrup, wash the mixing bowl and put in the chancaca, water and cinnamon. Set 20 min/100°C/speed 1 until syrupy. Strain.
- With wet hands, shape the rings and fry in hot oil until golden.
- Serve hot, drizzled with the chancaca syrup.
Tips
- Sweet potato gives the dough sweetness and softness.
- Fry them right before serving so they're crispy.
