Ingredients
- 500 g beef tenderloin, in strips
- 200 g sausages, sliced
- 4 large potatoes, cut into fries and fried
- 2 tomatoes, in wedges
- 1 onion, thinly sliced
- 2 locoto peppers, in strips
- 2 hard-boiled eggs, quartered
- 1 tablespoon mustard
- 1 tablespoon soy sauce
- Oil, salt, pepper and cumin to taste

- Season the meat with salt, pepper and cumin. Sauté it with 30 g oil 6 min/120°C/reverse/spoon speed. Set aside.
- In the same mixing bowl, put the onion, tomato and locoto 4 min/120°C/speed 1.
- Add the meat, sausages, mustard and soy sauce: mix 3 min/100°C/reverse/spoon speed.
- Separately, fry the potato fries until golden.
- Arrange the fries on a platter, topped with the meat and vegetable mixture.
- Garnish with hard-boiled egg and locoto. Serve piping hot.
Tips
- Locoto gives it the macho kick — adjust the amount to your heat tolerance.
- The fries should be served freshly fried so they stay crispy.
