Fried ripe plantain
Golden slices of ripe plantain, sweet inside, a classic accompaniment throughout the region.

Ingredients
- 3 large ripe plantains
- 300 ml oil for frying
- A pinch of salt
- 150 g grated dry cheese, optional
- 100 g refried beans to accompany
Step-by-step
Choose your robot:
- Peel the plantains and cut them into diagonal slices one centimeter thick.
- Place the oil in the mixing bowl and heat 8 min/120C/speed 1 until it is very hot.
- Carefully place the slices in a wide pan with the hot oil.
- Fry each side 2 to 3 minutes until golden and caramelized at the edges.
- Remove onto absorbent paper and sprinkle a pinch of salt.
- Serve hot with grated cheese and refried beans on the side.
Tips
- Use very ripe plantains, almost black, for maximum sweetness.
- Do not move them too much so they brown without falling apart.
- They go wonderfully with gallo pinto or casado.
