Fried ripe plantain

Golden slices of ripe plantain, sweet inside, a classic accompaniment throughout the region.

Ingredients

  • 3 large ripe plantains
  • 300 ml oil for frying
  • A pinch of salt
  • 150 g grated dry cheese, optional
  • 100 g refried beans to accompany

Step-by-step

Choose your robot:
  1. Peel the plantains and cut them into diagonal slices one centimeter thick.
  2. Place the oil in the mixing bowl and heat 8 min/120C/speed 1 until it is very hot.
  3. Carefully place the slices in a wide pan with the hot oil.
  4. Fry each side 2 to 3 minutes until golden and caramelized at the edges.
  5. Remove onto absorbent paper and sprinkle a pinch of salt.
  6. Serve hot with grated cheese and refried beans on the side.

Tips

  • Use very ripe plantains, almost black, for maximum sweetness.
  • Do not move them too much so they brown without falling apart.
  • They go wonderfully with gallo pinto or casado.
