Ingredients
- 1 kg chicken pieces
- 1 onion
- 1 red bell pepper
- 5 garlic cloves
- 200 g crushed tomato
- 50 g oil
- 1 teaspoon achiote
- 1 teaspoon oregano
- 300 g water
- Juice of 1 lime
- Salt and pepper to taste
Step-by-step

- Marinate the chicken with lime juice, salt, pepper and oregano 15 min.
- Put the garlic, onion and bell pepper in the mixing bowl. Chop 4 sec/speed 5 and scrape down with the spatula.
- Add the oil and achiote. Sauté 8 min/120°C/speed 1.
- Add the chicken and sear 8 min/Varoma/reverse/spoon speed.
- Add the tomato and water. Cook 25 min/100°C/reverse/spoon speed until the chicken is tender.
- Adjust the salt. The sauce should turn out thick and glossy.
Tips
- Achiote gives it the typical golden color of Dominican stews.
- Serve with white rice and stewed beans, the Dominican flag dish.
