Postre de Natas (Milk Skin Dessert)
Traditional Bogotá sweet made with milk skin, raw sugar and raisins.

Ingredients
- 1500 g whole milk
- 250 g grated panela (raw cane sugar)
- 1 cinnamon stick
- 80 g raisins
- 60 g sliced almonds
- 1 teaspoon vanilla extract

- Put the milk in the mixing bowl and set 15 min/90°C/speed 1 without the measuring cup so the milk skin forms.
- Carefully remove the milk skin and set it aside, repeating the process several times.
- Add the panela and cinnamon to the mixing bowl and cook 10 min/100°C/speed 1.
- Add the reserved milk skin and vanilla back in and cook 8 min/90°C/reverse/speed 1.
- Add the raisins and mix 30 sec/reverse/speed 1.
- Pour into glasses and decorate with sliced almonds.
- Refrigerate at least 2 hours before serving.
Tips
- The more milk skin you collect, the creamier the dessert turns out.
- Use good-quality raw or whole milk for the best result.
