Grilled Provoleta

Ingredients

  • 2 discs of provolone cheese, 2 cm thick
  • 1 tablespoon of dried oregano
  • 1 teaspoon of crushed chili
  • 1 drizzle of olive oil
  • 1 handful of cherry tomatoes
  • 1 clove of garlic
  • Country bread to serve alongside

Step-by-step

Choose your robot:
  1. Place the garlic in the mixing bowl and chop 3 sec/speed 7. Set aside.
  2. Sprinkle the provolone discs with oregano, crushed chili and the chopped garlic.
  3. Take the discs to a hot cast-iron pan or griddle and cook 3 min on each side until golden and melted.
  4. Meanwhile, in the mixing bowl place the cherry tomatoes and chop 2 sec/speed 4.
  5. Saute the tomatoes on the same griddle with a drizzle of olive oil for 3 minutes.
  6. Serve the provoleta hot with the tomatoes on top.
  7. Serve with toasted country bread.
  8. Eat immediately before the cheese hardens.

Tips

  • Use quality provolone so it melts without falling apart.
  • A splash of olive oil at the end enhances the flavor.
  • If you do not have a grill, a griddle or cast-iron pan works perfectly.
