Grilled Provoleta
Disc of melted provolone with oregano and crushed chili, an asado starter.

Ingredients
- 2 discs of provolone cheese, 2 cm thick
- 1 tablespoon of dried oregano
- 1 teaspoon of crushed chili
- 1 drizzle of olive oil
- 1 handful of cherry tomatoes
- 1 clove of garlic
- Country bread to serve alongside
Step-by-step
Choose your robot:
- Place the garlic in the mixing bowl and chop 3 sec/speed 7. Set aside.
- Sprinkle the provolone discs with oregano, crushed chili and the chopped garlic.
- Take the discs to a hot cast-iron pan or griddle and cook 3 min on each side until golden and melted.
- Meanwhile, in the mixing bowl place the cherry tomatoes and chop 2 sec/speed 4.
- Saute the tomatoes on the same griddle with a drizzle of olive oil for 3 minutes.
- Serve the provoleta hot with the tomatoes on top.
- Serve with toasted country bread.
- Eat immediately before the cheese hardens.
Tips
- Use quality provolone so it melts without falling apart.
- A splash of olive oil at the end enhances the flavor.
- If you do not have a grill, a griddle or cast-iron pan works perfectly.
