Homemade soy sauce, teriyaki base style

Ingredients

  • 150 ml soy sauce
  • 100 ml mirin
  • 50 ml sake
  • 3 tablespoons brown sugar
  • 1 piece of ginger, 2 cm
  • 1 garlic clove
  • 1 teaspoon cornflour
  • 2 tablespoons water

Step-by-step

Choose your robot:
  1. Put ginger and garlic in the mixing bowl and chop 3 sec/speed 7.
  2. Add soy, mirin, sake and sugar and mix 10 sec/speed 3.
  3. Set 8 min/100°C/speed 1 to integrate and reduce.
  4. Dissolve the cornflour in the water and add it.
  5. Cook 4 min/90°C/speed 2 until it has the body of a glaze.
  6. Strain and store in a sterilised jar.

Tips

  • Brush meats and fish at the end of cooking.
  • It keeps for a week in the fridge.
