Homemade soy sauce, teriyaki base style
Homemade umami base for Asian glazes and stir-fries.

Ingredients
- 150 ml soy sauce
- 100 ml mirin
- 50 ml sake
- 3 tablespoons brown sugar
- 1 piece of ginger, 2 cm
- 1 garlic clove
- 1 teaspoon cornflour
- 2 tablespoons water
Step-by-step
Choose your robot:
- Put ginger and garlic in the mixing bowl and chop 3 sec/speed 7.
- Add soy, mirin, sake and sugar and mix 10 sec/speed 3.
- Set 8 min/100°C/speed 1 to integrate and reduce.
- Dissolve the cornflour in the water and add it.
- Cook 4 min/90°C/speed 2 until it has the body of a glaze.
- Strain and store in a sterilised jar.
Tips
- Brush meats and fish at the end of cooking.
- It keeps for a week in the fridge.
