Tacu Tacu with Lomo Saltado
Golden bean-and-rice cake topped with stir-fried beef.

Ingredients
- 2 cups cooked canary beans
- 2 cups cooked rice
- 1 red onion
- 3 garlic cloves
- 1 tablespoon yellow chili (ají amarillo) paste
- 500 g beef tenderloin, in strips
- 2 tomatoes, in wedges
- 1 onion, in wedges
- 2 tablespoons soy sauce
- Vinegar, oil, salt and pepper

- Chop the onion and garlic 4 sec/speed 5 and sauté with oil 5 min/120°C/speed 1.
- Add the yellow chili and the beans. Blend 15 sec/speed 6 into a coarse purée.
- Mix with the rice 30 sec/reverse/spoon speed. Shape the tacu tacu and brown them in a separate pan.
- For the saltado: sear the seasoned tenderloin in a very hot pan 2 min, remove.
- Sauté the onion and tomato wedges 2 min, add the tenderloin, soy sauce and a splash of vinegar. Sauté 1 min.
- Serve the tacu tacu topped with the lomo saltado and its juices.
Tips
- The secret to tacu tacu is browning it well so it's crispy on the outside.
- The saltado must be cooked over high heat and quickly so the onion stays al dente.
