Homemade tahini
Fine sesame paste, the base of Middle Eastern cuisine.

Ingredients
- 300 g sesame seeds
- 50 g mild olive oil or sunflower oil
- 1 pinch of salt
Step-by-step
Choose your robot:
- Toast the sesame in a pan without oil until lightly golden and let it cool.
- Put the seeds in the mixing bowl and blend 30 sec/speed 7.
- Scrape down the sides with the spatula.
- Add the oil and salt.
- Blend 1 min/speed 5-10 until you get a fine, fluid paste.
- If it is thick, add a little more oil and mix 20 sec/speed 6.
- Pack into a clean jar.
Tips
- Base for hummus, baba ganoush and sauces.
- Store in the fridge for up to 1 month; stir if the oil separates.
- Toasting the sesame enhances its flavor but do not burn it.
