Caribbean Tostones

Ingredients

  • 3 green plantains
  • Plenty of oil for frying
  • 300 g water
  • 3 garlic cloves
  • 1 teaspoon salt

Step-by-step

Choose your robot:
  1. Prepare a brine with the water, the mashed garlic and the salt in a bowl. Set aside.
  2. Peel the plantains and cut them into thick slices about 3 cm.
  3. Heat the oil in a pan and fry the slices 4 minutes over medium heat until tender but pale. Remove.
  4. Flatten each slice with a tostonera or the bottom of a glass until flat.
  5. Dip each tostones in the garlic brine for a few seconds and drain well.
  6. Fry the tostones again 3 minutes until golden and crispy.
  7. Drain on absorbent paper, salt to taste and serve hot.

Tips

  • The brine bath gives them flavor and more crunch.
  • Serve them with garlic mojo or pink sauce.
  • The oil should be very hot for the second frying.
