Caribbean Tostones
Green plantain slices fried, flattened and fried again.

Ingredients
- 3 green plantains
- Plenty of oil for frying
- 300 g water
- 3 garlic cloves
- 1 teaspoon salt
Step-by-step
Choose your robot:
- Prepare a brine with the water, the mashed garlic and the salt in a bowl. Set aside.
- Peel the plantains and cut them into thick slices about 3 cm.
- Heat the oil in a pan and fry the slices 4 minutes over medium heat until tender but pale. Remove.
- Flatten each slice with a tostonera or the bottom of a glass until flat.
- Dip each tostones in the garlic brine for a few seconds and drain well.
- Fry the tostones again 3 minutes until golden and crispy.
- Drain on absorbent paper, salt to taste and serve hot.
Tips
- The brine bath gives them flavor and more crunch.
- Serve them with garlic mojo or pink sauce.
- The oil should be very hot for the second frying.
