Greek tzatziki

Ingredients

  • 400 g Greek yogurt
  • 1 cucumber
  • 1 garlic clove
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • Salt to taste

Step-by-step

Choose your robot:
  1. Grate the cucumber, salt it and let it drain for 10 minutes to release water.
  2. Put the garlic in the mixing bowl and blend 5 sec/speed 7.
  3. Add the Greek yogurt, the oil, the lemon juice and the salt.
  4. Mix 15 sec/speed 3 until combined.
  5. Squeeze the grated cucumber well with your hands to remove the excess water.
  6. Add the cucumber and the dill to the mixing bowl.
  7. Mix 10 sec/reverse/speed 2 so as not to blend the cucumber.
  8. Chill in the fridge for 1 hour before serving.

Tips

  • Draining the cucumber well stops the tzatziki becoming watery.
  • Serve with pita bread, vegetables or grilled meats.
  • Use authentic Greek yogurt for a creamier texture.
