Shrimp Vatapa (Vatapá)

Ingredients

  • 200 g sandwich bread without crusts
  • 300 ml milk
  • 400 ml coconut milk
  • 300 g peeled shrimp
  • 100 g toasted peanuts
  • 1 onion
  • 3 garlic cloves
  • 30 g palm oil (dende)
  • 1 piece of fresh ginger
  • 1 bunch cilantro
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Soak the bread in the milk for 10 minutes and set aside.
  2. Put the peanuts in the mixing bowl and grind 20 sec/speed 8; set aside.
  3. Put the onion, garlic, ginger and cilantro in the mixing bowl and chop 5 sec/speed 5.
  4. Add the dende oil and saute 6 min/Varoma/spoon speed.
  5. Add the soaked bread, the coconut milk and the ground peanuts.
  6. Blend 30 sec/speed 6 until you get a smooth cream.
  7. Set 15 min/90°C/reverse/speed 3, stirring the cream.
  8. Add the shrimp and cook 6 min/90°C/reverse/spoon speed.
  9. Season and serve with white rice and acaraje.

Tips

  • Stir so the cream does not stick to the bottom.
  • The dende is key for the Bahian color and aroma.
  • Serve piping hot.
