Ingredients

  • 500 g of assorted seafood (shrimp, squid, scallops)
  • 4 tablespoons of aji amarillo paste
  • 3 slices of sandwich bread
  • 250 ml of evaporated milk
  • 1 onion, chopped
  • 3 garlic cloves
  • 50 g of parmesan cheese
  • 2 tablespoons of oil
  • 100 ml of white wine
  • Salt, pepper and nutmeg

Step-by-step

Choose your robot:
  1. Soak the bread in the evaporated milk for 5 minutes.
  2. Place the onion and garlic in the mixing bowl and chop 5 sec/speed 5.
  3. Add the oil and saute 6 min/120°C/spoon speed.
  4. Add the aji amarillo paste and the wine and saute 4 min/120°C/spoon speed.
  5. Add the soaked bread and crush 30 sec/speed 7 until a smooth cream.
  6. Add the seafood and cook 8 min/90°C/reverse/spoon speed.
  7. Add the cheese, nutmeg and pepper, mix 2 min/90°C/reverse/spoon speed and serve with rice.

Tips

  • Do not overcook the seafood so it does not turn rubbery.
  • Add the shrimp at the end if they are very small.
  • Serve with white rice and a glass of chilled white wine.
