Rain Fritters (Bolinho de Chuva)

Ingredients

  • 250 g wheat flour
  • 2 eggs
  • 180 ml milk
  • 60 g sugar
  • 10 g baking powder
  • 1 teaspoon cinnamon
  • Zest of 1 lemon
  • Oil for frying
  • Sugar and cinnamon for coating

Step-by-step

Choose your robot:
  1. Put the eggs, milk and sugar in the mixing bowl and mix 20 sec/speed 4.
  2. Add the flour, baking powder, cinnamon and lemon zest.
  3. Mix 30 sec/speed 4 until you get a thick, smooth batter.
  4. Let the batter rest 10 minutes in the mixing bowl.
  5. Heat plenty of oil to 170°C in a pan.
  6. With two spoons form little balls and drop them into the hot oil.
  7. Fry until golden, turning them, and drain on paper towels.
  8. Roll in the sugar and cinnamon mixture while still warm.

Tips

  • Do not make the balls too large so they cook through.
  • The oil should not be too hot.
  • Serve freshly made.
