Calzones Rotos

Fried and crispy pastries dusted with powdered sugar, a typical Chilean sweet.

Ingredients

  • 400 g of flour
  • 3 eggs
  • 80 g of sugar
  • 50 g of melted butter
  • 1 tsp of baking powder
  • Zest of 1 lemon
  • 1 tbsp of pisco or aguardiente, optional
  • Oil for frying
  • Powdered sugar for dusting

Step-by-step

Choose your robot:
  1. Put in the mixing bowl the eggs, the sugar and the melted butter. Beat 30 sec/speed 4.
  2. Add the lemon zest and the pisco. Mix 10 sec/speed 3.
  3. Add the flour and the baking powder. Knead 2 min/closed mixing bowl/dough mode until a firm dough forms.
  4. Let the dough rest covered for 15 min.
  5. Roll out the dough thin, cut rectangles and make a cut in the center. Pass one end through the cut to form the knot.
  6. Heat plenty of oil to 180°C.
  7. Fry the calzones rotos until golden on both sides, about 2 min in total.
  8. Drain on absorbent paper and dust generously with powdered sugar.

Tips

  • Roll out the dough very thin so they turn out crispy.
  • The touch of pisco brings flavor and makes them lighter.
  • Dust the powdered sugar while they are still warm.
