Ingredients
- 400 g assorted seafood (shrimp, mussels, clams)
- 3 rolls soaked in milk
- 500 ml milk
- 1 onion, diced
- 2 garlic cloves
- 3 tablespoons butter
- 1 teaspoon ají de color (paprika)
- 1/2 cup grated cheese
- 1/4 cup cream
- A splash of white wine
- Salt, pepper and merkén
Step-by-step

- Soak the bread in the milk for 10 min.
- Put the garlic and onion in the mixing bowl, chop 4 sec/speed 5 and sauté with the butter 7 min/120°C/spoon speed.
- Add the ají de color and wine and reduce 3 min/100°C/speed 1 with no measuring cup.
- Add the bread with the milk and blend 20 sec/speed 6.
- Add the seafood and cream and set 8 min/90°C/reverse/spoon speed. Season with salt and pepper.
- Divide among ramekins, top with cheese and broil 12 min at 200°C. Finish with merkén.
Tips
- Don't overcook the seafood so it doesn't turn rubbery.
- Gluten-free: use gluten-free bread soaked in milk the same way.
