Ensalada Chilena

The classic salad of tomato and julienned onion with cilantro and chili, fresh and simple.

Ingredients

  • 4 ripe and firm tomatoes
  • 1 large onion
  • 1/2 bunch of fresh cilantro
  • 1 green chili, optional
  • 3 tbsp of olive oil
  • 1 tbsp of vinegar or lemon juice
  • Salt to taste

Step-by-step

Choose your robot:
  1. Cut the onion in fine julienne with a knife and leave in cold salted water for 10 min to remove the sharpness.
  2. Cut the tomatoes in thin wedges by hand to keep their shape.
  3. Put the cilantro in the mixing bowl and chop 2 sec/speed 4.
  4. Drain the onion very well and mix it in a bowl with the tomato and the chopped cilantro.
  5. Add the chili in fine strips if you wish.
  6. Dress with olive oil, vinegar or lemon and salt just before serving.
  7. Mix carefully and serve fresh as a side.

Tips

  • Soaking the onion softens it and makes it more digestible.
  • Dress at the end so the tomato does not release too much water.
  • Pairs with grilled meats, empanadas or any Chilean dish.
