Ensalada Chilena
The classic salad of tomato and julienned onion with cilantro and chili, fresh and simple.

Ingredients
- 4 ripe and firm tomatoes
- 1 large onion
- 1/2 bunch of fresh cilantro
- 1 green chili, optional
- 3 tbsp of olive oil
- 1 tbsp of vinegar or lemon juice
- Salt to taste
Step-by-step
Choose your robot:
- Cut the onion in fine julienne with a knife and leave in cold salted water for 10 min to remove the sharpness.
- Cut the tomatoes in thin wedges by hand to keep their shape.
- Put the cilantro in the mixing bowl and chop 2 sec/speed 4.
- Drain the onion very well and mix it in a bowl with the tomato and the chopped cilantro.
- Add the chili in fine strips if you wish.
- Dress with olive oil, vinegar or lemon and salt just before serving.
- Mix carefully and serve fresh as a side.
Tips
- Soaking the onion softens it and makes it more digestible.
- Dress at the end so the tomato does not release too much water.
- Pairs with grilled meats, empanadas or any Chilean dish.
