Ingredients
- 400 g black beans soaked the night before
- 200 g pork ribs in pieces
- 150 g smoked bacon in cubes
- 150 g smoked sausage or chorizo in slices
- 100 g desalted dried beef in cubes
- 1 onion in quarters
- 4 garlic cloves
- 2 bay leaves
- 1 orange cut in half
- 1.2 liters water
- 30 g oil
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the garlic and onion in the mixing bowl and chop 5 sec/speed 5; scrape the bits down toward the blades.
- Add the oil and saute 7 min/Varoma/spoon speed.
- Add the bacon, sausage and ribs and brown 5 min/Varoma/reverse/spoon speed.
- Add the drained beans, dried beef, bay leaves, orange and water.
- Set 60 min/100°C/reverse/spoon speed with the basket on the lid instead of the measuring cup.
- Check that the beans are tender; if needed, set a further 15 min/100°C/reverse/spoon speed.
- Remove the orange and bay leaves, season and mix 20 sec/reverse/spoon speed.
- Let rest 10 minutes and serve with white rice and orange segments.
Tips
- Desalt the dried beef well by changing the water several times.
- The whole orange adds aroma and helps balance the fat.
- It tastes even better the next day.
