Brazilian Feijoada (Feijoada)

Ingredients

  • 400 g black beans soaked the night before
  • 200 g pork ribs in pieces
  • 150 g smoked bacon in cubes
  • 150 g smoked sausage or chorizo in slices
  • 100 g desalted dried beef in cubes
  • 1 onion in quarters
  • 4 garlic cloves
  • 2 bay leaves
  • 1 orange cut in half
  • 1.2 liters water
  • 30 g oil
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the garlic and onion in the mixing bowl and chop 5 sec/speed 5; scrape the bits down toward the blades.
  2. Add the oil and saute 7 min/Varoma/spoon speed.
  3. Add the bacon, sausage and ribs and brown 5 min/Varoma/reverse/spoon speed.
  4. Add the drained beans, dried beef, bay leaves, orange and water.
  5. Set 60 min/100°C/reverse/spoon speed with the basket on the lid instead of the measuring cup.
  6. Check that the beans are tender; if needed, set a further 15 min/100°C/reverse/spoon speed.
  7. Remove the orange and bay leaves, season and mix 20 sec/reverse/spoon speed.
  8. Let rest 10 minutes and serve with white rice and orange segments.

Tips

  • Desalt the dried beef well by changing the water several times.
  • The whole orange adds aroma and helps balance the fat.
  • It tastes even better the next day.
