Caribbean Coconut Flan

Ingredients

  • 150 g sugar for the caramel
  • 4 eggs
  • 1 can of condensed milk (400 g)
  • 1 can of evaporated milk (370 g)
  • 200 g cream of coconut
  • 50 g grated coconut
  • 1 teaspoon vanilla essence

Step-by-step

Choose your robot:
  1. Prepare the caramel in a flan mold by melting the sugar over heat until golden and cover the bottom of the mold. Set aside.
  2. Put in the mixing bowl the eggs, the condensed milk, the evaporated milk, the cream of coconut, the grated coconut and the vanilla.
  3. Mix 30 sec/speed 5 until all the ingredients are combined.
  4. Pour the mixture over the caramel in the flan mold and cover with aluminum foil.
  5. Without washing the mixing bowl, put 1 liter of water and place the flan mold in the Varoma dish.
  6. Set 50 min/Varoma/speed 1 to steam-cook the flan; check with a toothpick that it comes out clean.
  7. Let it cool, refrigerate at least 4 hours and unmold carefully before serving.

Tips

  • Refrigerating it several hours makes unmolding easier.
  • Decorate with toasted coconut on top.
  • If you prefer the oven, cook in a water bath at 160°C for 50 minutes.
