Mexican avocado cream with tomato, lime and coriander.

Ingredients

  • 3 ripe avocados
  • 1 tomato
  • 1/2 onion
  • 1 jalapeno chile
  • 1 bunch coriander
  • Juice of 1 lime
  • 1 teaspoon salt

Step-by-step

Choose your robot:
  1. Put the onion, the jalapeno and the coriander in the mixing bowl and chop 3 sec/speed 4.
  2. Add the quartered tomato and chop 2 sec/speed 3, set aside in a bowl.
  3. Add the avocado flesh, the lime and the salt to the mixing bowl.
  4. Blend 8 sec/speed 4 leaving some texture.
  5. Mix the avocado with the reserved chopped mixture using a spatula.
  6. Adjust the salt and serve immediately.

Tips

  • The lime keeps the avocado from oxidising.
  • Serve freshly made for the best colour and flavour.
