Humita in a Pot
Sweet cream of grated corn with onion and cheese, smooth and comforting.

Ingredients
- 6 fresh corn cobs (or 600 g of kernels)
- 1 onion
- 1 green onion
- 1 red bell pepper
- 200 ml of milk
- 100 g of fresh cheese in cubes
- 1 teaspoon of sweet paprika
- 1 pinch of sugar
- 2 tablespoons of oil
- Salt and pepper to taste
- Fresh basil to taste
Step-by-step
Choose your robot:
- Place the corn kernels in the mixing bowl and grind 20 sec/speed 6 until you get a coarse paste. Set aside.
- Without washing, chop the onion and the bell pepper 4 sec/speed 5.
- Add the oil and saute 7 min/Varoma/spoon speed.
- Add the ground corn, the paprika, the sugar, the milk, salt and pepper.
- Cook 20 min/100 degC/reverse/speed 1 until it thickens.
- Add the diced cheese and the chopped green onion. Mix 2 min/90 degC/reverse/spoon speed.
- Adjust the salt and add chopped basil at the end.
- Serve very hot, on its own or as a filling for tamales.
Tips
- A pinch of sugar enhances the natural sweetness of the corn.
- If it is too thick, add a little more hot milk.
- You can also bake it in small dishes with gratinated cheese.
