Cabbage Kimchi
Spicy fermented cabbage, a staple of Korean cuisine.

Ingredients
- 1 napa cabbage
- 4 tablespoons coarse salt
- 1 carrot, in strips
- 3 scallions
- 4 garlic cloves
- 1 piece ginger (3 cm)
- 3 tablespoons gochugaru (Korean chili flakes)
- 1 tablespoon soy sauce
- 1 teaspoon sugar

- Cut the cabbage, mix it with the salt and let it rest 1 hour to release water. Rinse and drain well.
- Put the garlic, ginger, soy sauce, sugar and gochugaru in the mixing bowl. Blend 8 sec/speed 6 into a paste.
- In a large bowl, mix the cabbage, carrot, scallions and chili paste with gloved hands.
- Transfer the kimchi to a jar, pressing it down so it's compact and covered by its own liquid.
- Let ferment at room temperature 1 to 2 days, then refrigerate.
Tips
- Wear gloves when handling the gochugaru.
- The flavor improves with days of fermentation.
