Ingredients
- The juice of 3 lemons
- The zest of 1 lemon
- 150 g sugar
- 3 eggs
- 80 g butter
Step-by-step
Choose your robot:
- Grate the peel of 1 lemon 10 sec/speed 10.
- Add the sugar, juice, eggs and butter in pieces.
- Mix 10 sec/speed 4 to combine.
- Set 8 min/80C/speed 4 until it thickens.
- If it has not thickened enough, add 2 more min/80C/speed 4.
- Pour into sterilized jars and let cool.
- Refrigerate at least 2 hours before consuming.
Tips
- Store in the fridge for up to 2 weeks in a sealed jar.
- Perfect for filling tartlets, sponge cakes and crepes.
- Strain the cream if you want an even finer texture.
