Ingredients

  • The juice of 3 lemons
  • The zest of 1 lemon
  • 150 g sugar
  • 3 eggs
  • 80 g butter

Step-by-step

Choose your robot:
  1. Grate the peel of 1 lemon 10 sec/speed 10.
  2. Add the sugar, juice, eggs and butter in pieces.
  3. Mix 10 sec/speed 4 to combine.
  4. Set 8 min/80C/speed 4 until it thickens.
  5. If it has not thickened enough, add 2 more min/80C/speed 4.
  6. Pour into sterilized jars and let cool.
  7. Refrigerate at least 2 hours before consuming.

Tips

  • Store in the fridge for up to 2 weeks in a sealed jar.
  • Perfect for filling tartlets, sponge cakes and crepes.
  • Strain the cream if you want an even finer texture.
