Ingredients
- 500 g corn flour for tamales
- 150 g lard or vegetable shortening
- 1 teaspoon baking powder
- 1 teaspoon salt
- 600 ml warm chicken stock
- Soaked corn husks for wrapping
Step-by-step

- Put the lard in the mixing bowl and beat 3 min/speed 4 until fluffy.
- Add flour, baking powder and salt and mix 20 sec/speed 4.
- Add the stock little by little while mixing 1 min/speed 4.
- Knead 2 min/closed mixing bowl/dough mode to a soft, spreadable dough.
- Check that a little dough floats in water, a sign of the right point.
- Spread the dough over the corn husks and add your filling.
- Wrap the tamales and close the husks well.
- Place in the Varoma and cook 35 min/Varoma/speed 1 with 700 ml water in the mixing bowl.
- Let rest 5 minutes before opening.
Tips
- The dough should be spreadable, not liquid.
- Fill with mole, cheese with chile strips or shredded chicken.
