Merluza Frita con Salsa Verde
Breaded and golden hake fillets accompanied by a fresh green sauce.
Ingredients
- 4 hake fillets
- 2 beaten eggs
- 1 cup of flour
- 1 cup of breadcrumbs
- Oil for frying
- 1 bunch of cilantro and parsley for the sauce
- 1 clove of garlic
- 100 ml of olive oil
- Juice of 1 lemon
- Salt and pepper
Step-by-step
Choose your robot:
- Season the hake fillets with salt, pepper and a little lemon juice.
- For the sauce, put in the mixing bowl the garlic, the cilantro and the parsley. Chop 4 sec/speed 6.
- Add the olive oil, the lemon juice and salt. Emulsify 20 sec/speed 5. Set aside in a bowl.
- Pass each fillet through flour, then through beaten egg and finally through breadcrumbs.
- Heat plenty of oil to 180°C in a pan.
- Fry the fillets 3 min per side until golden and crispy.
- Drain on absorbent paper.
- Serve the hake hot accompanied by the green sauce and boiled potatoes or Chilean salad.
Tips
- The double breading in flour, egg and breadcrumbs gives the best crust.
- Fry at a constant temperature so it does not absorb oil.
- The green sauce brings freshness and cuts the fried flavor.
