Merluza Frita con Salsa Verde

Breaded and golden hake fillets accompanied by a fresh green sauce.

Ingredients

  • 4 hake fillets
  • 2 beaten eggs
  • 1 cup of flour
  • 1 cup of breadcrumbs
  • Oil for frying
  • 1 bunch of cilantro and parsley for the sauce
  • 1 clove of garlic
  • 100 ml of olive oil
  • Juice of 1 lemon
  • Salt and pepper

Step-by-step

Choose your robot:
  1. Season the hake fillets with salt, pepper and a little lemon juice.
  2. For the sauce, put in the mixing bowl the garlic, the cilantro and the parsley. Chop 4 sec/speed 6.
  3. Add the olive oil, the lemon juice and salt. Emulsify 20 sec/speed 5. Set aside in a bowl.
  4. Pass each fillet through flour, then through beaten egg and finally through breadcrumbs.
  5. Heat plenty of oil to 180°C in a pan.
  6. Fry the fillets 3 min per side until golden and crispy.
  7. Drain on absorbent paper.
  8. Serve the hake hot accompanied by the green sauce and boiled potatoes or Chilean salad.

Tips

  • The double breading in flour, egg and breadcrumbs gives the best crust.
  • Fry at a constant temperature so it does not absorb oil.
  • The green sauce brings freshness and cuts the fried flavor.
