Mote con Huesillo

Refreshing summer drink with dried peaches and wheat mote in syrup.

Ingredients

  • 8 huesillos (dried peaches)
  • 1 cup of cooked wheat mote
  • 1 liter of water
  • 200 g of sugar or chancaca
  • 1 cinnamon stick
  • Peel of 1/2 orange

Step-by-step

Choose your robot:
  1. Soak the huesillos in warm water for 30 min to hydrate them.
  2. Put in the mixing bowl the water, the sugar or chancaca, the cinnamon and the orange peel. Heat 8 min/100°C/speed 1.
  3. Add the soaked huesillos and cook 25 min/100°C/reverse/spoon speed until they are soft.
  4. Remove the cinnamon and the peel. Let the syrup cool completely.
  5. Separately cook the wheat mote in water until tender, then drain it.
  6. Refrigerate the syrup with the huesillos for at least 2 hours.
  7. Serve in a tall glass: first a spoonful of mote, then a huesillo and cover with the cold juice.

Tips

  • The chancaca gives the most traditional color and flavor to the syrup.
  • Serve it very cold, it is the emblematic drink of the Chilean summer.
  • The mote should stay loose, not clumped.
