Papa a la huancaina

Ingredients

  • 4 yellow potatoes, cooked and sliced
  • 4 tablespoons of aji amarillo paste
  • 200 g of fresh cheese
  • 150 ml of evaporated milk
  • 4 soda crackers or 1 slice of bread
  • 2 tablespoons of oil
  • 1 hard-boiled egg in slices
  • Lettuce leaves to serve
  • Black olives
  • Salt to taste

Step-by-step

Choose your robot:
  1. Place the aji amarillo, the fresh cheese, the milk, the crackers, the oil and the salt in the mixing bowl.
  2. Crush 1 min/speed 8 until you get a very smooth and homogeneous sauce.
  3. If it is too thick, add a little more milk and mix 15 sec/speed 6.
  4. Taste and adjust the salt with 10 sec/speed 4.
  5. Place the lettuce leaves on the plates and the potato slices on top.
  6. Generously bathe the potatoes with the huancaina sauce.
  7. Decorate with hard-boiled egg and olives and serve fresh.

Tips

  • The sauce should be thick but fluid; adjust with milk.
  • Also serve the sauce over noodles for a delicious variation.
  • Use fresh cheese that is not too salty to balance it.
