Patacones (tostones)

Ingredients

  • 3 green plantains
  • Plenty of oil for frying
  • 1 teaspoon salt
  • 500 g salted water for soaking
  • 1 garlic clove (optional)

Step-by-step

Choose your robot:
  1. Peel the green plantains and cut them into thick slices about 3 cm.
  2. Heat plenty of oil in a pan over medium heat (170C).
  3. Fry the slices 4 minutes until lightly golden but not crispy.
  4. Remove, smash each slice with a press or between two boards until thin.
  5. Briefly dip in the salted water with garlic for flavor, and drain well.
  6. Fry the patacones again for 3 minutes until golden and crispy.
  7. Drain on paper towels, salt to taste and serve with hogao or guacamole.

Tips

  • The second frying is what gives the crispy texture.
  • Serve them hot with suero costeno or hogao.
  • Watch the oil temperature so they do not burn.
