Patacones (tostones)
Slices of green plantain fried, smashed and crispy.

Ingredients
- 3 green plantains
- Plenty of oil for frying
- 1 teaspoon salt
- 500 g salted water for soaking
- 1 garlic clove (optional)
Step-by-step
Choose your robot:
- Peel the green plantains and cut them into thick slices about 3 cm.
- Heat plenty of oil in a pan over medium heat (170C).
- Fry the slices 4 minutes until lightly golden but not crispy.
- Remove, smash each slice with a press or between two boards until thin.
- Briefly dip in the salted water with garlic for flavor, and drain well.
- Fry the patacones again for 3 minutes until golden and crispy.
- Drain on paper towels, salt to taste and serve with hogao or guacamole.
Tips
- The second frying is what gives the crispy texture.
- Serve them hot with suero costeno or hogao.
- Watch the oil temperature so they do not burn.
