Ingredients
- 600 g mixed seafood (squid, prawns, scallops)
- 1 red onion
- 4 garlic cloves
- 2 tablespoons ají panca paste
- 2 tablespoons yellow chili (ají amarillo) paste
- 3 slices sandwich bread
- 1 cup evaporated milk
- 1/2 cup white wine
- 1/4 cup Parmesan cheese
- Oil, salt and pepper
Step-by-step

- Soak the bread in the milk, put it in the mixing bowl and blend 15 sec/speed 8. Set aside.
- Chop the onion and garlic 4 sec/speed 5 and sauté with oil 5 min/120°C/speed 1.
- Add the ají panca and yellow chili and sauté 4 min/120°C/speed 1.
- Add the wine and cook 3 min/100°C/speed 1 to evaporate the alcohol.
- Add the seafood. Cook 8 min/90°C/reverse/spoon speed.
- Add the blended bread and cheese. Cook 5 min/90°C/reverse/spoon speed. Adjust the salt.
- Serve with white rice.
Tips
- Don't overcook the seafood so it doesn't turn rubbery.
- Add the scallops at the end so they don't toughen.
