Condensed Milk Pudding (Pudim de Leite)

Ingredients

  • 395 g condensed milk
  • 395 ml milk (same can)
  • 3 eggs
  • 150 g sugar for the caramel
  • 50 ml water for the caramel

Step-by-step

Choose your robot:
  1. Make the caramel in a saucepan with the sugar and water until golden and line a mold with it.
  2. Put the condensed milk, the milk and the eggs in the mixing bowl.
  3. Mix 30 sec/speed 4 until well combined without making foam.
  4. Pour the mixture into the caramelized mold and cover with aluminum foil.
  5. Put 1 liter of water in the clean mixing bowl and place the mold in the Varoma dish.
  6. Set 50 min/Varoma/speed 1 to steam-cook in a bain-marie.
  7. Check with a skewer that it comes out clean; if needed, add 10 min/Varoma/speed 1.
  8. Let cool and refrigerate 4 hours before unmolding.

Tips

  • Mix gently to avoid bubbles in the flan.
  • Chilling makes it easier to unmold.
  • You can also bake it in a bain-marie at 180°C.
