Ranfanote
Criollo dessert of fried bread with raw cane sugar syrup, walnuts and cheese.

Ingredients
- 4 day-old French rolls
- 300 g chancaca (raw cane sugar)
- 400 ml water
- 1 cinnamon stick
- 3 cloves
- Orange peel
- 100 g chopped walnuts
- 100 g fresh cheese, diced
- 50 g shredded coconut
- Oil for frying
Step-by-step

- Cut the bread into cubes and fry in hot oil until golden. Drain on paper and set aside.
- For the syrup, put the chancaca, water, cinnamon, cloves and orange peel in the mixing bowl. Set 25 min/100°C/speed 1 until syrupy. Strain.
- Pour the syrup over the fried bread cubes in a bowl and mix gently.
- Add the walnuts, fresh cheese and shredded coconut, folding in carefully.
- Serve warm in individual portions.
Tips
- The contrast of salty cheese with sweet syrup is the signature of this dish.
- Use dry bread so it absorbs the syrup well without falling apart.
