Mexican green sauce
Fresh tomatillo and coriander sauce, tangy and spicy.

Ingredients
- 500 g green tomatillos, husked
- 1 serrano chile
- 1/2 onion
- 1 garlic clove
- 1 bunch fresh coriander
- 1 teaspoon salt
- 100 ml water
Step-by-step
Choose your robot:
- Put the tomatillos in the Varoma and cook 12 min/Varoma/speed 1 with 500 ml water in the mixing bowl.
- Empty the mixing bowl and add onion, garlic and serrano and chop 3 sec/speed 5.
- Add the cooked tomatillos and the water and blend 30 sec/speed 7.
- Add coriander and salt and mix 10 sec/speed 4.
- Adjust the salt and serve at room temperature.
Tips
- If you cannot find tomatillo use firm green tomato.
- Ideal for green enchiladas or chilaquiles.
