Mexican green sauce

Ingredients

  • 500 g green tomatillos, husked
  • 1 serrano chile
  • 1/2 onion
  • 1 garlic clove
  • 1 bunch fresh coriander
  • 1 teaspoon salt
  • 100 ml water

Step-by-step

Choose your robot:
  1. Put the tomatillos in the Varoma and cook 12 min/Varoma/speed 1 with 500 ml water in the mixing bowl.
  2. Empty the mixing bowl and add onion, garlic and serrano and chop 3 sec/speed 5.
  3. Add the cooked tomatillos and the water and blend 30 sec/speed 7.
  4. Add coriander and salt and mix 10 sec/speed 4.
  5. Adjust the salt and serve at room temperature.

Tips

  • If you cannot find tomatillo use firm green tomato.
  • Ideal for green enchiladas or chilaquiles.
